When it comes to celebrating the mother in your life, there must be tea and cake, always. Accompanied by a fresh bouquet of flowers, and a heartfelt time to kick back and relax for the day, what could be better?
My mother is the most accommodating and selfless person I know, and a wonderful baker! So I am sharing with you this week one of her most simple and delicious chocolate tea cake recipes, with the addition of a spiced pear twist!
Spiced Pear Tea Cake
This tea cake only takes 35 minutes to bake, and is an absolute joy to indulge in. It is egg and dairy free, so vegan friendly. For a gluten free version of the recipe, replace the flour with two cups of gluten free, self-raising flour.
Spice Mix:
1/2 Teaspoon Ground Cinnamon
1/2 Teaspoon Ground Ginger
1/4 Teaspoon Ground Clove
1/4 Teaspoon Ground Allspice
1/4 Teaspoon Ground Cardamon
1/4 Teaspoon Ground Nutmeg
Pinch of Ground Coriander (Trust me)
Cake Mix:
1 1/2 Cups Self-Raising Flour
1/4 Cup Cocoa Powder
1 Cup Coconut Sugar
1 Teaspoon Baking Soda
Pinch of Salt
1 Cup of Water
1 Teaspoon Vinegar
1/4 Cup Cooking Oil
1 Pear, Peeled and Sliced
With your oven preheated to 180°C and your cake tin coated for baking, you first want to lay a round of baking paper down on the bottom of your tin. Carefully place your pear slices in even rows upon this paper, and then sprinkle over some of your spice mix and coconut sugar.
In a separate bowl, sift together all of your dry ingredients, including the remains of your spice mix. Make a well in the centre and pour in all of your wet ingredients. Give your batter a light stir- until just combined- and pour it evenly over the top of your pre-prepared spiced pears, in your cake tin.
Bake your tea cake for 35 minutes, and dust with icing sugar once cooled, if preferred.
